Working in Paris gave me an appreciation and understanding of “Bistronomy”… “French casual fine dining: casual decor, quality food.”
For me, “Bistronomy” is all about top quality food without all the extra fuss. No ironed-white tablecloths, elaborate service or ultra-high end price tags. Just quality ingredients with minimal manipulation; a small plate of roasted carrots with a nice sauce and cheap natural wine by the glass. For me, this is food in its prime.
